Sustainable Cocktail Alternatives

Orgeat, a nut based syrup traditionally made from almonds, adds decadent sweetness and velvety texture to many classic tropical cocktails. However almonds are notoriously water intensive to grow.

We partnered with The Trash Collective for Earth Month to rethink how we can still incorporate the creamy delicious flavors of orgeat into one of our favorite tropical cocktails, the Saturn, in a more sustainable fashion that allows for more diversified crops and reduces food waste.

Check out the recipes below for orgeat alternatives made from either rye berries or discarded bread ends!

RyE Orgeat

~1L Yield

Ingredients
200g rye berries
600mL sugar
~400g granulated sugar

Toast rye berries on stove
Combine with water
Flash blend
Let sit 12-24 hours

Strain through a super bag or cheesecloth, straining to get as much liquid out as possible

Measure volume of liquid - should be about 400mL
Add sugar at a 1:1 ratio (mL : g)
Whisk to dissolve sugar

Bottle and store in the fridge

Rye Bread End Orgeat

~1L Yield

Ingredients
200g bread ends
600mL water
~400g granulated sugar

Tear up and toast the bread for about 20 mins at 350F in the oven

Add toasted bread ends to 600mL water

Flash blend and let sit 12-24 hours

Strain through a super bag or cheesecloth, straining to get as much liquid out as possible

Measure volume of liquid - should be around 400mL

Add sugar at a 1:1 ratio (mL : g)

Whisk to dissolve sugar

Bottle and refrigerate

Sustainable Saturn

The Saturn is one of the first classic tropical cocktails to call for gin. The tart, refreshing mixture brims with bright passion fruit and spice flavors. While the original recipe calls for almond orgeat, using these sustainable orgeat alternatives creates a guilt-free delicious tropical cocktail treat!

Saturn Cocktail Recipe
1.5oz Barr Hill Gin
.5oz Chinola Passion Fruit Liqueur
.5oz Rye Berry Orgeat
.5oz Miso Falernum
.75oz Fresh Lemon Juice

Shake with ice. Double strain over crushed ice.
