Celebrate the flavor and depth of real, raw honey in some of our favorite cocktails.

BEE'S KNEES
The phrase “bee’s knees” was prohibition-era slang for “the best.” This classic cocktail born from the prohibition era combines gin, lemon, and honey. The Bee’s Knees cocktail is especially important to the Barr Hill family. Each year we celebrate Bee’s Knees Week, a spotlight on the importance of bees in our food and drink system, and a community of bartenders working together to save the bees. Ingredients:
2 oz Barr Hill Gin (sub Tom Cat Gin or Barr Hill Vodka for a delicious variation)
0.75 oz Fresh Lemon Juice
0.75 oz Raw Honey Syrup (2 parts honey to 1 part hot water. Let cool.)
Lemon Twist GarnishPreparation:
Combine ingredients in a shaker, add ice, shake, then double strain into a chilled cocktail glass. Add garnish. -
HONEY COLLINS
A refreshing drink that makes a delicious cocktail or mocktail.
Ingredients:
2 oz Barr Hill Gin (sub strong chilled tea for a mocktail)
1 oz Fresh Lemon Juice
0.75 oz Honey Syrup (2 parts honey to 1 part hot water. Let cool.)
top SeltzerPreparation:
Shake gin, lemon juice and honey syrup with ice and strain into a Collins glass. Add fresh ice and top with seltzer. Garnish with a lemon wheel.

PUCKER UP
A bright, alluring mashup of a Lemon Drop Martini and Bee's Knees cocktail.
Ingredients:
2 oz Barr Hill Gin
0.5 oz Cointreau
0.5 oz Chamomile Honey Syrup*
0.75 oz Fresh Lemon Juice
bee pollen rimPreparation:
If desired, brush side of a cocktail glass with honey and dust with bee pollen. Shake all ingredients with ice and strain into the glass.
*Chamomile Honey Syrup - brew an extra strong cup of chamomile tea (3-4 tea bags). Combine 1 cup raw honey with 1/2 cup tea concentrate. Stir until the honey has dissolved.

HIVE 75
A riff on a French 75 that leans into the flavors of honey and cider - ideal for the harvest season!
Ingredients:
1.5 oz Barr Hill Gin (sub Tom Cat Gin or Barr Hill Vodka for a delightful variation)
0.75 oz Honey Syrup (2 parts honey to 1 part hot water. Let cool.)
0.75 oz FreshLemon Juice
top Dry Hard CiderPreparation:
Add everything but the cider to a shaker with ice. Shake and double strain into a flute glass. Top with cider and garnish with a lemon twist.

MINT TO BEE
Mint, lime and honey syrup combine in this refreshing cocktail.
Ingredients:
2 oz Barr Hill Vodka
0.75 oz Fresh Lime Juice
0.5 oz Honey Syrup
8 Mint Leaves
top Seltzer
Preparation:Combine mint and honey syrup and muddle gently, then add the lime juice, Barr Hill Vodka and ice, shake for 15 seconds and strain into a tall glass over fresh ice. Top with club soda or seltzer. Add fresh lime and mint to garnish.

HOT TODDY
Rich oak and hints of juniper elevate the classic Toddy.
Ingredients:
2 oz Tom Cat Gin
0.5 oz Fresh Lemon Juice
0.5 oz Raw Honey
3 Cloves
4 oz Boiling WaterPreparation:
Add the Tom Cat Gin, a spoonful of honey, cloves and lemon juice to a mug. Top with boiling water and stir until the honey has fully dissolved. Garnish with a clove studded orange wheel.
