1.5oz Tom Cat Gin
.5oz Pear Brandy
.75oz Spiced Cider Reduction*
.5oz Lemon Juice
Top Sparkling Wine and Seltzer
Shake all ingredients except bubbles in a shaker with ice. Strain into a balloon glass over fresh ice and top with equal parts seltzer and sparkling wine to taste. Garnish with dried apple or lemon.
*Spiced Cider Reduction - in a sauce pot add 2 cups apple cider, 3 cinnamon sticks, 3-4 cloves and 1 star anise pod. Gently simmer until cider reduces by half. Let spices steep for 30 mins, then strain and bottle.
